12 - 6 slices cheddar cheese, halved
13 - 12 dill pickle slices

15 - 1 small tomato, thinly sliced
16 - 1 cup shredded lettuce
17 - 2 tablespoons unsalted butter, melted
18 - 1 tablespoon sesame seeds

# Directions:

01 - Combine mayonnaise, ketchup, mustard, relish, smoked paprika, and onion powder in a small bowl. Mix thoroughly and refrigerate until ready to serve.
02 - Mix ground beef with salt, pepper, and garlic powder in a large bowl. Handle gently to avoid overworking. Divide mixture into 12 equal portions and shape into patties slightly larger than the buns to account for shrinkage during cooking.
03 - Heat a large skillet or grill pan over medium-high heat. Cook patties for 2 to 3 minutes per side until well-browned and cooked through. Place half-slice of cheddar cheese on each patty during the final minute to melt.
04 - Brush cut sides of buns with melted butter. Toast in a dry skillet or oven until golden brown and lightly crisped.
05 - Spread special sauce on both top and bottom buns. Place cheesy patty on bottom bun, then layer with pickle slice, red onion, tomato, and lettuce as desired. Top with bun and sprinkle with sesame seeds if using.
